The brisk winds of fall are fast approaching! Last week in central Oregon was blustery and wet. This week beautiful 70-degree sunny days!

And today, we’re sharing this delicious fall or winter snack: Apple Butter Oatmeal Bars.

Welcome autumn … or is it fall? I often wonder how autumn became the only season with two names?

I did a little research. Before autumn and fall it was “harvest.”

As late as the 18th century, English speakers couldn’t agree when, exactly, fall would take place. Some thought fall began in August and ended in November, while others contested that it began in September (at the equinox) and ended in December (with the solstice).

I see a glimpse of the leaves beginning to change, and so are my tastebuds!

Pumpkin, apples, winter (late fall) squash, so many delicous soups, stews, one-pot meals, and desserts!

My palate right now is screaming APPLES! I miss our dear friends back home (Medford, Oregon) and their delicious apples they would bring us every year.

Apple Oatmeal Bars

This time I bought Trader Joe’s Apple Cinder Jam (but you can also use Apple Butter) and made these Apple Butter Oatmeal Bars Recipe! DELISH!

Serve them warm with ice cream (vanilla, of course).

Or cut them in squares and bring on a picnic or pack in your kid’s lunches!

So easy to whip up a batch.

Apple Butter Oatmeal Bars Recipe, the perfect fall treat. Serve warm with ice cream, or pack in a school lunch, or bring a pan on a picnic!

Ingredients

  • 2 cups all purpose flour
  • 2 cups old fashioned oats
  • 1/2 cup brown sugar
  • 1/2 tsp. kosher salt
  • 1 tsp. baking soda
  • 1/2 tsp. cardamon
  • 1 1/2 cups butter, melted
  • 1 cup apple butter, or apple jam
  • 1/2 cup applesauce

Instructions

  • Preheat oven to 350ºF and line a 9x13 baking dish with parchment paper.

  • Mix flour, oats, brown sugar, salt, cardamon, and baking soda in a bowl. Add butter and combine with hands; mixture will be crumbly.

  • Press 2/3 of the flour/oat mixture evenly into the bottom of the prepared baking dish.

  • Mix together apple butter and applesauce. Spread apple mixture evenly on top of oat mixture; sprinkle with remaining topping.

  • Bake on middle rack for 25-30 minutes. Allow to cool completely in the pan on a wire rack. Store in airtight container in the fridge for up to a week. Enjoy!

    Am I to mix the apple buttter with the applesauce?

      Yes, mix together. Press 2/3 of crumb mixture on the bottom. Clarified on the recipe! :)

    There is an inconsistency between your ingredients list and your directions. Could you please clarify for me. In the ingredients you list 1/2 cup sugar. In the directions you say to mix flour, oats and *brown* sugar. Which one do we use? Granulated sugar or brown sugar?
